My steps:
1) Set DK2 in extended mode
2) Set DK2 primary monitor
3) Press SHIFT+WIN+ARROWKEY to move STEAM in the standard monitor
4) Start ASSETTO CORSA and press SHIFT+WIN+ARROWKEY to move AC window in the standard monitor
4) Go into OPTION--VIDEO and select:
1920x1024 @74hz
Oculus rift
disable V-Sync
select 77fps in framerate limit
5) When click on START RACE button, the AC menu remains in the standard monitor but the track will appear in DK2.
6) ENJOY
