Io parlo per sentito dire e non per conoscenze personali perche' non seguo l'evolversi delle cpu dal pentium 1

Both max out at 70c with identical coolers. (Swiftech Polaris)
In folding, the 3570 beats the 2500 but about 3 minutes per frame. That with a 200 mhz handicap.
Gaming, you won't notice the difference but I'd still go Ivy because of the superior memory controller that will support upwards of 2800 mhz memory, and the PCIe 3.0 that will give your GPU(s) more bandwidth which will mean better frame rates. This will become even more relevant if you SLI or fire.
